I've got a favorite go-to recipe to share - Cottage Cheese with Cucumber and Dill. It's not just tasty, but also gentle on your healing stomach, high in protein (28g per serving), and so quick to prepare. Although this is a great recipe for your soft food phase after surgery, this can be a nice recipe to keep handy forever.
The cottage cheese provides the protein we need, while the cucumber adds a refreshing touch that's not too heavy. Then, there's the dill, it adds this wonderful herby flavor that ties everything together. You can either enjoy it straight up or chill it in the fridge for a while to let the flavors blend even more. Whichever way you prefer, it's truly a simple delight.
1 cup low-fat cottage cheese
1/2 cup finely chopped cucumber
1 tablespoon fresh dill, finely chopped
Salt and pepper to taste
If you're in the early stages of recovery and need your foods pureed, start by placing the cottage cheese, cucumber, and dill in a food processor or blender. Blend until the mixture is smooth. If you can tolerate soft chunks, skip this step.
In a bowl, mix the low-fat cottage cheese with the finely chopped cucumber.
Add in the freshly chopped dill, and season with salt and pepper to taste. If you blended the ingredients, add your seasonings and stir well.
You can enjoy this dish immediately, or refrigerate it for an hour before eating to allow the flavors to meld together. Enjoy!
This meal is perfect for post-bariatric surgery patients transitioning into eating soft foods. It's packed with protein from the cottage cheese and is very easy on the stomach. Remember to monitor how your body reacts to new foods after surgery and adjust as necessary. You can puree the meal further or add more liquid if needed.
